Introducing a Fall Dessert Recipe to Kick the Season Off with a Bang!

As Fall rolls in, the desire for summer time favourites, such as ice cream and dairy-based desserts are giving away to more warming and seasonal selections, such as sweet potato pound cake and apple butter spice pound cake. While these seasonal desserts may seem somewhat more complicated to make than their summer counterparts, the truth is that ensuring you have the right ingredients and the ability to follow simple instructions will allow you to expand your dessert repertoire quite extensively.

Following is one dessert to get you started.

Sweet Potato Pound Cake

When prepared properly, sweet potato pound cake will prove to be a family favourite. People tend to love it because it is moist and delicious without being too sweet.

Ingredients:

Grated orange zest — 2 tablespoons

Orange juice — 5 5 teaspoons

Sifted confections sugar — 1 cup

Salt — ¼ teaspoon

Ground nutmeg — ½ teaspoon

Baking soda — ½ teaspoon

Ground Cinnamon — 1 teaspoon

Baking powder — 2 teaspoons

All-purpose flour — 3 cups

Eggs — 4

Vanilla extract —1 teaspoon

Cooked and mashed sweet potatoes — 2 cups

White sugar — 2 cups

Softened butter — 1 cup

Instructions

Prep time — 20 minutes

Cook time — 1 hour 20 minutes

Ready in — 2 hours

The oven should be preheated to 350 degrees F. Take a 10-inch tube pan and grease and flour it. The baking powder, flour, nutmeg, baking soda, cinnamon and salt should be sifted together and then set to the side.

Next, use a large mixing bowl to cream the butter and sugar, making sure that it is light and fluffy, then add the sweet potatoes and the vanilla. Make sure that the ingredients are well blended. Add the eggs, one at time, and finally add the flour mixture and mix until it is well blended.

Pour the mixture into the pan and bake at 350 degrees F for 1 hour 20 minutes. Once you remove the cake from the oven, allow it to cool for 20 minutes before inverting it onto a serving plate. One alternative to a serving plate would be to serve it on a wood cutting board. You can top your cake with any of a number of glazed sauces, or you can choose to serve it plain. Either way, your family and guests will enjoy it.
